Carrots: Protein Packed Banana Bread




Yes, I jumped on the quarantine baking bandwagon. But on this rainy Memorial Day Monday, I am happy to say that following the crowd led to a delicious smelling kitchen and a scrumptious breakfast. 

This banana bread is delicious and so easy. With zero refined sugars and a couple scoops of vegan protein powder, it’s also healthier than your average baked good. So you can feel good about starting your day with a slice and a steaming cup of coffee. 

Here’s the recipe. 

Protein Packed Banana Bread

Ingredients
1/3 cup coconut oil, melted
3 medium to large over-ripe bananas
1/4 cup agave
1 teaspoon vanilla extract 
1 1/4 cups all purpose flour
2 scoops vegan vanilla protein powder*
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup dark chocolate chunks 

*I used Orgain Super Foods Vanilla Bean protein powder

Method
Preheat the oven to 350 degrees. 

Mash the bananas in a medium bowl and add the other wet ingredients. Stir to thoroughly combine. 

In a second medium bowl, mix the dry ingredients. Then, add the wet ingredients to the dry ingredients. You will need to stir a bit more than you would for regular banana bread because protein powder tends to be very fine. Add the chocolate chunks.

Grease a loaf pan and pour batter into the pan. Smooth the top with a spatula. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. 

Remove from the oven and cool for 10 minutes in the pan, then turn out onto a cooling rack. Slice and serve when cooled to room temperature. Store leftovers in an airtight container for up to 5 days.
