Carrots: Last of the Summer Heirloom Tomato Panzanella Salad

Sometimes you just want summer to linger just a bit longer, and today was one of those days. I also happened to find some absolutely gorgeous heirloom tomatoes at my local grocery store. If you haven't tried the difference between locally grown heirloom tomatoes and your regular garden variety grocery store tomatoes, you are missing out. They are the most flavorful and sweet tomatoes... I could slice them and eat them right off a plate.

This salad was inspired by my craving for heirloom tomatoes, and another summer favorite--the panzanella salad. 

Last-of-the-Summer Heirloom Tomato Panzanella Salad

Ingredients
3 medium or 2 large heirloom tomatoes, sliced into bite sized pieces
1 bag of arugula
1/2 can garbanzo beans, rinsed and drained
1/2 can kidney beans, rinsed and drained
1 1/4 cups crunchy croutons
4-5 large leaves of basil, chiffonade
1/4 cup balsamic vinaigrette dressing
Salt and pepper, to taste

Toss all the ingredients together and serve immediately. Enjoy!
