Carrots: When Avocado Toast Becomes Dinner

Even though the days are getting longer in terms of sunlight, that doesn’t mean we actually accrue more hours in the day. Today was one of those days where I had the best of intentions to shop for groceries on my way home from work and then whip up a fab dinner. But, you know what they say about best laid plans. Cut to me staring into a somewhat sparse fridge and pantry to scrounge up a meal at dinner time. The result? A surprisingly satisfying Green Avocado Toast. Because some days, avocado toast does a dinner make. 

Green Avocado Toast 
Serves 1-2

Ingredients
1 large or 2 mini very ripe avocados 
2 tablespoons lemon juice
2 green onions, diced (save some for garnishing)
1/2 teaspoon Tajin seasoning
Several turns of freshly ground pepper and sea salt
A generous pinch of red pepper flakes
A handful of mixed greens
A handful of broccoli florets
2 thick slices of your favorite bakery bread (I used a fresh and soft French bread)
A drizzle of olive oil to finish 

Method
In a small bowl, mash the avocado with the lemon juice. Add the seasoning and green onion. Mix well. 

Toast the bread and then coat with a thin schmear of the avocado mixture while the bread is still warm. Layer some mixed greens and broccoli florets. Then, divide the remaining avocado mixture evenly between the two slices and top with the remaining green onion. Add an extra sprinkle of salt and pepper and drizzle with olive oil.
