Carrots: Chipotle Bean Dip and Guac

Guac is my go-to when we have any sort of gathering, especially when that falls on a week where my husband has bought an entire bag of avocados from Costco or Trader Joe's. Why oh why can they not seem to bag the avocados in a manner so that they progressively become ripe, one by one? Instead, I end up with a bag of rocks at the beginning of the week, and then 5-7 ripe to overly-ripe avocados that need to be used at the end of the week. So, some weeks I have to get creative with our avocado usage. Aside from avocado toast, guac is a pretty great way to use up a bunch of ripe to overly-ripe avocados.

The guac's partner in crime is a zesty chipotle bean dip with lime, cumin, and a spicy chipotle chili powder. I served both with veggies and chips, but I also had a side of salsa and serrano infused almonds. The bean dip was great on its own, but I will use the leftovers as the base of tacos before loading up a tortilla with roasted or grilled sweet potatoes and veggies. A dollop of bean dip would also be a great protein-packed addition to a salad.

Go-To Guacamole

Ingredients
4 large very ripe avocados
3/4 cup finely chopped cilantro
1/2 diced onion
1 finely diced jalapeƱo 
4 tablespoons fresh lime juice
2 tablespoons distilled white vinegar
1 1/2 teaspoons sea salt
1 teaspoon cayenne pepper

Method
Dice and prep the ingredients. Then, open and slice the avocados and empty them into a medium sized bowl. Using a potato masher or the back of a fork, mash the avocadoes until they’re a rough puree. Then, add the other ingredients. Stir well and taste. Adjust seasoning as needed.

To store, put into an air-tight container and push plastic wrap down onto the surface of the guacamole before putting the lid on the container. Enjoy the same day.




Chipotle Bean Dip

Ingredients
2 can low sodium black beans, drained not rinsed
1/2 cup cilantro
2 tablespoons lime juice
2 teaspoons cumin
2 teaspoons chipotle chili powder
1 teaspoon sea salt, to taste

Method
Place all the ingredients in a food processor. Using the puree setting, process the ingredients until they are fully pureed. I used the puree setting and then whirred for another minute or two on high. Taste and adjust seasoning. Store in an airtight container in the fridge for up to 5 days.
