Carrots: Avocado "Toast" on Fried Tofu

You know when you eat a meal and you're already thinking to yourself, "I can't wait until I get to eat this again"? Well, this is that meal for me.

If you read this blog regularly, you know I love avocado toast. Yep, I'm 100% on that bandwagon. I order it while on vacation. I make it for weeknight dinners. And, I will pay $20 for avocado toast while brunching with friends on the weekend. 

This version uses fried tofu as the base as a protein-rich sub for bread. And let me tell you, the salty crispiness of the tofu is a great replacement and you will not miss the bread. You could easily throw a fried egg on this for added protein if you're not vegan, but I think it's great as is.



Here's the recipe.

Avocado "Toast" on Fried Tofu

Ingredients
1 16-oz block Trader Joe's high protein extra firm tofu*, drained and pressed
Coconut oil spray
4-6 teaspoons cornstarch
Salt and pepper
2 large ripe avocados
2-4 tablespoons everything bagel seasoning
1 lemon, quartered or sliced
1 large or 2 medium tomatoes, thinly sliced

Method
Preheat the air-fryer to 375 degrees Fahrenheit. Slice the pressed tofu into 4 flat rectangles, slicing into the side of the tofu and cutting the long way to create sheets.

Spray each sheet with coconut oil and then sprinkle about a half teaspoon of cornstarch on each slice. Spread the cornstarch with your hands or a fork and then generously salt and pepper. Flip each tofu sheet over and repeat with the cornstarch, salt, and pepper.

Cook the tofu in the air-fryer for 13 minutes, moving the tofu sheets every couple of minutes and flipping halfway through the cooking time.**

Remove and plate. Top each tofu sheet with 1/2 of a sliced avocado. Sprinkle generously with everything bagel seasoning and squeeze about 1/4 of a lemon onto each "toast". Add sliced tomato on top, or as a garnish on the side and enjoy.

Recipe Notes:
*I have experimented with various brands of tofu over the last 14 years of following a vegan diet. The Trader Joe's High Protein Extra Firm tofu is by far the best firm tofu in taste and texture. See photo of packaging below.
**If you don't own an air-fryer, you could bake the tofu in the oven or pan fry.
